Chocolate Apricot Fudge

A delicious treat, this Chocolate Apricot Fudge has the smooth, rich texture of chocolate fudge and the sweet and sour taste of dried apricots. It's a great way to satisfy your sweet tooth and a lovely homemade gift.

Ingredients:

  • 2 cups of semi-sweet chocolate chips

  • 1 can 14 ounces sweetened condensed milk

  • 1/2 cup dried apricots, chopped

  • 1/2 teaspoon vanilla extract

  • A pinch of salt

Instructions:

Put parchment paper around the edges of an 8x8-inch 20x20 cm square baking pan, leaving some overhang to make it easy to take off


Put the chocolate chips and sweetened condensed milk in a bowl that can go in the microwave


To make the mixture smooth and fully melted, microwave it for 30 seconds at a time and stir it after each one


Chop up the dried apricots and add them along with the vanilla extract and a pinch of salt


Put the fudge mix into the pan that has been prepared, and make the top smooth


Put it in the fridge for at least two hours, or until it sets


When the fudge is set, use the extra parchment paper to lift it out of the pan


Toss it around and cut it up


Serve and have fun!

Ingredients:

  • 1

  • 5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1/4 cup soy sauce

  • 2 tablespoons rice vinegar

  • 2 tablespoons ketchup

  • 1 tablespoon brown sugar

  • 1 garlic clove, minced

  • 1/2 teaspoon grated fresh ginger

  • 1/4 teaspoon red pepper flakes

  • 1/2 cup cashews

  • 2 teaspoons cornstarch

  • 2 tablespoons water

  • Green onions, thinly sliced optional, for garnish

Instructions:

Gather soy sauce, rice vinegar, ketchup, brown sugar, garlic, ginger, and red pepper flakes in a bowl


Mix them all together


Put chicken pieces in the slow cooker


Cover the chicken with the sauce mix


It should be on low for 34 hours or high for 1


52 hours, until the chicken is soft and cooked all the way through


Add water and cornstarch to a small bowl


Stir until the mixture is smooth


Mix the cornstarch and water together and add it to the slow cooker with the cashews


Put the lid on top and cook on high for another 30 minutes, or until the sauce gets thicker


Put it on top of rice and add green onions if you want

Portabella and Halloumi Burgers

For a tasty vegetarian option, try these Portabella and Halloumi Burgers. They have the rich flavor of Portabella mushrooms and the creamy, salty goodness of halloumi cheese. Great for a barbecue without meat or a quick and filling meal.

Ingredients:

  • 2 Portabella mushrooms

  • 4 slices of halloumi cheese

  • 4 burger buns

  • 1/4 cup olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • 4 lettuce leaves

  • 4 slices of tomato

  • 4 slices of red onion

  • 4 tablespoons mayonnaise

  • 4 teaspoons Dijon mustard

Instructions:

Warm up the grill over medium-high heat


Take the stems off of the Portabella mushrooms and clean them clean


Place the garlic, dried oregano, salt, and pepper in a small bowl


Add the olive oil and mix them together


Use the olive oil mixture to coat the onion slices and portobello mushrooms


Put the mushrooms and halloumi slices on the grill


Cook for four to five minutes on each side, or until they are soft and have grill marks


Add the burger buns to the grill and toast them for one to two minutes, until they get a little brown


Spread Dijon mustard and mayonnaise on the bottom half of each bun before putting the burgers together


Put a Portabella mushroom, a slice of halloumi cheese, a slice of tomato, and a slice of red onion on each bun


Then add a lettuce leaf


Put the other half of the bun on top


With your favorite sides, serve the Portabella and Halloumi Burgers hot

Ingredients:

  • 8 oz rotini pasta

  • 1 cup chopped salami

  • 1 cup chopped ham

  • 1 cup chopped provolone cheese

  • 1/2 cup chopped green olives

  • 1/2 cup chopped black olives

  • 1/4 cup chopped pepperoncini

  • 1/4 cup chopped red onion

  • 1/4 cup chopped fresh parsley

  • 1/4 cup olive oil

  • 2 tbsp red wine vinegar

  • 1 tbsp Dijon mustard

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

Instructions:

Follow the directions on the package to cook the rotini pasta until it is al dente


Run cold water over the drain and rinse


Pasta that has been cooked should be put in a large bowl with chopped provolone cheese, chopped green olives, chopped black olives, chopped pepperoncini, chopped red onion, and chopped parsley


Put the olive oil, red wine vinegar, Dijon mustard, Italian seasoning, salt, and pepper in a small bowl and mix them together with a whisk


Add the dressing to the pasta salad and toss it around to make sure it's all covered


Put the pasta salad in the fridge for at least an hour before you serve it so that the flavors can mix


Enjoy! Serve cold

Sesame Tofu

Crispy and flavorful sesame tofu made with a savory marinade and baked to perfection. This vegan dish is packed with protein and makes a delicious main or side.

Ingredients:

  • 1 block firm tofu, pressed and cubed

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 1 tablespoon rice vinegar

  • 1 tablespoon maple syrup

  • 1 tablespoon cornstarch

  • 2 cloves garlic, minced

  • 1 teaspoon grated ginger

  • 2 tablespoons sesame seeds

  • 2 green onions, thinly sliced

  • Cooking spray

Instructions:

Get the oven ready by heating it up to 400F 200C


Put soy sauce, sesame oil, rice vinegar, maple syrup, cornstarch, garlic, and ginger in a bowl and mix them together with a whisk


Put the tofu cubes in the bowl and gently toss them around to cover them all


Put tofu cubes on a baking sheet and spray it with cooking spray


Make sure they are all in one sheet


If you want the tofu to get golden and crispy, bake it for 25 to 30 minutes and flip it over halfway through


Add sesame seeds and sliced green onions to the tofu after taking it out of the oven


Enjoy while hot!

Perfect Tarte Tatin

The Perfect Tarte Tatin is a classic French dessert known for its rich caramelized apples and buttery pastry. This recipe ensures a beautiful balance of sweetness and tartness in every bite, making it an irresistible treat for any occasion.

Ingredients:

  • 6-8 large apples, preferably Granny Smith

  • 1 cup granulated sugar

  • 1/2 cup unsalted butter

  • 1 sheet puff pastry, thawed if frozen

Instructions:

Warm the oven up to 190C 375F


Peel, core, and cut the apples into fourths


Melt the butter over medium heat in a 9-inch skillet that can go in the oven


Spread out the sugar on top of the melted butter, and then cook until the sugar turns caramelized and amber


Place the apple quarters tightly in a circle in the skillet, making sure they fit together well


For about 15 minutes, or until the apples get a little soft, cook the apples in the caramel


To fit the skillet, roll out the puff pastry and place it over the apples


Tuck the edges of the pastry into the skillet


Put the pie in the oven for 25 to 30 minutes, or until the crust is golden brown and crunchy


Ten minutes of letting the tart cool in the pan


Carefully flip the tart over onto a plate for serving


If you want, you can serve it warm with whipped cream or vanilla ice cream

Instant Pot Mexican Rice

An easy and delicious Instant Pot recipe for Mexican rice. Ideal as a stand-alone entre or a side dish.

Ingredients:

  • 1 cup long-grain white rice

  • 1 1/2 cups chicken broth

  • 1/2 cup tomato sauce

  • 1/4 cup diced onion

  • 1/4 cup diced bell pepper

  • 1/4 cup frozen corn

  • 1/4 cup frozen peas

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp paprika

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 2 tbsp vegetable oil

  • 1/2 cup shredded cheddar cheese optional

  • Fresh cilantro leaves for garnish optional

Instructions:

Till the water runs clear, rinse the rice under cold water


Make sure to drain well


Once the Instant Pot is turned on, choose the "Saute" setting


In the pot, warm the vegetable oil


Add the garlic, bell pepper, and diced onion


Saute until they begin to soften, about 2 to 3 minutes


After adding the rice, saut for an additional two minutes, stirring now and then


Add the paprika, cumin, chili powder, salt, and black pepper


Toss to distribute the spices throughout the rice and veggies


Add the tomato sauce and chicken broth


Mix thoroughly


Shut off the "Saute" function, close the Instant Pot lid, and turn the valve to "Sealing


" Choose the 'Pressure Cook' or 'Manual' setting and allow it to cook on high pressure for 4 minutes


After the cooking time is over, let the pressure naturally release for ten minutes before manually releasing any residual pressure


Using a fork, fluff the Mexican rice in the Instant Pot after opening


Add the frozen peas and corn and stir


After about five minutes, close the lid and allow the corn and peas to warm from the residual heat


If you'd like, top the rice with shredded cheddar cheese and let it melt for a minute


If desired, top the hot Instant Pot Mexican Rice with fresh cilantro leaves

  • 1/2 tsp ground turmeric

  • 1 tsp ground cinnamon

  • 1 Tbsp flaxseed meal optional

  • 1-2 tsp maple syrup or sweetener of choice optional

Instructions:

Add all ingredients to a high-speed blender

Low FODMAP Rice Paper Rolls

These Low FODMAP Rice Paper Rolls are perfect for individuals with sensitive digestive systems. Packed with fresh and crunchy ingredients, they are light, flavorful, and served with a tasty dipping sauce.

Ingredients:

  • 8 rice paper wrappers

  • 1 cup cooked and shredded chicken breast

  • 1 cup thinly sliced cucumber

  • 1 cup carrot matchsticks

  • 1 cup lettuce leaves

  • 1/4 cup fresh cilantro leaves

  • 1/4 cup fresh mint leaves

  • 1/4 cup peanut or almond butter for the dipping sauce

  • 2 tablespoons low FODMAP soy sauce

  • 2 tablespoons rice vinegar

  • 1 tablespoon maple syrup

  • 1/2 teaspoon grated fresh ginger

  • 1/2 teaspoon sesame oil

  • Warm water for soaking rice paper wrappers

Instructions:

Get everything you need ready and set it aside


Put warm water in a big bowl


Put one rice paper wrapper into the warm water and hold it there for 15 seconds, or until it's soft but not too soft


Place the wet rice paper wrapper on a clean surface


Put a lettuce leaf in the middle of the wrapper to begin


On top of the lettuce, put a few pieces of shredded chicken, cucumber, carrot sticks, cilantro leaves, and mint leaves


Like rolling a burrito, fold the sides of the wrapper over the filling and then roll it up tight from the bottom up


Do the same thing again with the rest of the wrappers and filling


Soy sauce low in FODMAP, rice vinegar, maple syrup, grated ginger, and sesame oil should all be mixed together in a small bowl with a whisk to make the dipping sauce


Dip the rice paper rolls in the sauce and serve them with the sauce on the side


Enjoy your tasty rice paper rolls that are low in FODMAPs
